Easy, Customizable Chia Seed Pudding

Try this simple foundational recipe and then add your own favorite flavorings!

Looking for something that's tasty and packs a nutritional punch? Look no further than chia seeds.

Despite their size, these little buggers are a powerhouse filled with all sorts of good stuff:

Just 1 ounce (28 grams) of chia seeds contains:

  • Fiber: 11 grams

  • Protein: 4 grams

  • Fat: 9 grams (5 of which are omega-3s)

  • Calcium: 18% of the RDI

  • Manganese: 30% of the RDI

  • Magnesium: 30% of the RDI

  • Phosphorus: 27% of the RDI

They also contain a decent amount of zinc, vitamin B3 (niacin), potassium, vitamin B1 (thiamine) and vitamin B2.

And they are loaded with antioxidants and most of the carbs in them are fiber, which means that it's a low-carb friendly food and doesn't raise your blood sugar. Pretty awesome, right?

So after you make this recipe there are so many ways you can take it. You can eat it straight without adding anything (because it tastes delicious as is!), or you can add fruit and nuts. Some of my favorite add-ins are bananas, strawberries, dates, mint, cocoa powder, or I'll add a little nut butter if I use almond milk for a thicker consistency :)

There are a plethora of different combos you can experiment with, but here's the basic for you.

 

Basic Chia Seed Pudding

Ingredients

  • 3 tbsp of chia seeds

  • 1 cup of your favorite nut milk (I use either coconut or almond milk)

  • 2 tsp of honey (optional)

  • 1 tsp of vanilla extract (optional)

Directions

  1. Add all ingredients to a small jar (use a bigger jar if you want to add toppings later)

  2. Mix until well combined

  3. Leave in the refrigerator overnight
